I know, I know, I know I almost never update my blog and my friends and family probably never even read it anymore because of it. sorry, but with school and all I just don't have time to sit on the computer anymore. So.....Culinary school is going great. We are in baking portion of the semester. Baking breads such as Baguettes, soft rolls, Honey wheat bread, oat bran rolls (my favorite), cookies, pies, creme brulee, puff pastry and that sort of thing. I do have to be in school by 6 am! My alarm goes off at 4:30 am, it's horrible but I got used to it. But I'm learning a lot and having fun so it's o.k.
Halloween was fun, especially since the weather was so nice. We had friends come over and all of our kids went trick-a treating together.
For thanksgiving, we went to my mother in law's house. Tim's aunt Sandy was visiting from out of town and we had a lot of fun. My father in law, Bruce, cooked the most moist turkey I've ever eaten in my life!!!
The kids are doing great. Victoria is 10 months december 4th and her teeth just look so funny!! She looks like a vampire. We can't get over it! We love her so much, we just can't stop kissing her. Sydney and Alejandro go crazy over her. She's crawling everywhere and stands on her own for a few seconds. She's a very smiley baby and sleeps a lot.

Yellowstone!!!


















Can you guys believe that I'm writing another post within a month of each other?!!! I'm trying to get good at this blog thing. Well, we went to Island Park in Idaho, it was really close to Yellowstone so of course we went. I loved it!!! I had never been to Yellowstone and now I want to go back soon to see it all. We went to Tiffany and Seth's family cabins. They were so beautiful. Lyndee and Chris George and Diana and Tyler Coe also went with us. Our kids had so much fun. They loved playing in the dirt and riding the 4 wheeler!!! We went swimming in Yellowstone and we all loved it. (sorry if I don't make sense in what I'm writing. I'm trying to do this while I work answering phones at the same time)
The girls were laughing at me because I asked if "Rexburg" was a supermarket. They all could not believe I did not know it is a famous city in Idaho. Sorry...I'm not from around here. I'm a New Yorker!!!! But they forgave me. The entire trip was great!! We had a blast! We even saw a Buffalo while in Yellowstone..just walking around the street. gotta go. peace!

Camping with the Santo's Family at Yuba Lake July 24th weekend







We went camping with the Santo's family to Yuba Lake the weekend of July 24th. We had a blast with them. Alejandro just wanted to "go fishing" the entire time. Sydney, of course, just wanted to be in the water swimming all day long. And we just kept Victoria in her little walker the whole time. I had only been water skiing once before and was not able to get up at all. I finally got to get up this time, thanks to Magno's patience of letting me try over and over and over again. It was so cute, we were all cheering each other. Amanda Santos did it on her first try, she made it seem like it was the easiest thing in the world. We were all so mad!!! Tim of course, did not have a problem either. We all had such a blast. Rosie doesn't enjoy boting as much so she stayed fishing, and boy did she catch us fish. There was a total of ten people and we all had plenty of fish for dinner plus the next day and I still brought one big fish home.

And yes, Sydney and I both cut our hair. I'm an Oprah fan and I had seen a show about donating your hair, so I decided to do it. I told Sydney that there are kids her age that are embarrassed to go out because they have no hair from being sick. And how important it was to try to make a difference on someone's life. Plus, I told her since our hair grows so fast, we'll be back to our long hair in no time! She loved the idea and did it with me. It felt really good doing it. Knowing that MY hair is going to go to someone who really needs it is an amazing feeling. I donated 14 inches and Sydney 10 inches. I recommend it guys!!! Just go to www.locksoflove.org for details.

Tim's Rockband Party




o.k. so I'm a little behind doing this blog thing. The last post was for our baby Victoria's birth in February. What has happened since then....Tim had an rockband party just for boys. He kicked the kids and me out of the house so I called Diana and we took our kids to Chick fillet (is that how you spell it?) to eat and play. I'm glad the boys did an activity. I feel bad me being the one with all the 'activities'. They were supposed to come dressed rock style and some guys did.

Victoria Julieanne Nielsen was born Feb 4th at 11:50 pm. She was 7 lbs 14 oz and measured 21 inches. Tim liked the name Victoria (he pronounces it with a spanish accent) and Julieanne is his sister's name. She is so cute. We can't stop kissing her.

We went into the hospital around 6PM after Josselyn’s doctor told her she was dilated to 5 cm. At around 11:30pm she was finally ready to go and the doctor arrived. With only a half hour till midnight we were convinced that our new addition would come after midnight but the doctor had a different idea. As soon as he arrived Josselyn told him that we thought it would have been so cool to have a baby on 2-4-08, and as soon as he thought about it he said, “Yeah that would be pretty cool.” After getting everything setup it was 11:42 and time was running out. The doctor got ready then calmly told Josselyn to push. After 3 pushes she was out. Josselyn watched through a mirror for the first time and kept saying “wow” as the baby started coming out. As soon as the baby was out Josselyn and I said at the same time “It’s a girl.” This is our last baby so we are really trying to enjoy it as much as possible. I have to say that for anyone thinking about waiting to find out what sex your baby is I have to say that it was worth the wait.
After all the messy stuff was taken care of the baby and I went up to the nursery for her first bath and to do her picture and shots. My poor wife was getting prepped for surgery to, in her words, “tie, cut and burn her tubes.” She received some additional anesthetic through her epidural tube and as they took her to surgery she started hemorrhaging. The doctor gave her some medicine that would help her uterus contract which should stop the bleeding. After the baby was taken care of and sleeping I started getting worried about Josselyn because she had been gone for a long time. I went back to the room she delivered in and she was there still trying to recover from the after affects of that medicine. She was shaking uncontrollably. I cannot tell you how scary it is to see someone you love so much in a situation like this. The nurse told me in her condescending tone that “The shaking is normal because of the pills she took.” I’m sorry but shaking uncontrollably is never normal. I tried to do whatever I could to try to help her relax but I refused to relax myself. After an hour and a half the shaking subsided and she started to seem herself. At about 2AM we moved up to the recovery room and settled in for a long night of waking every two hours to try and feed our new daughter.

The next two days kind of all blurred together as we tried to juggle Sydney and Alejandro from grandma’s house to friends houses and then to the hospital. All this time we kept trying to figure out what we were going to name our daughter. About two months previous I had a dream about my older sister Julieanne and I had told Josselyn about it and that I think we were going to have a girl. I also told her that if it was a girl I thought we should name her Julieanne. At the time it sounded like a good idea but now that the time had arrived I was not so sure. I love my sister very much but I was really nervous that if I named my daughter after her she would take it the wrong way. In the end Josselyn convinced me that a few months ago I was sure and if it was a good idea at that time then it is still a good idea. So we named her Victoria Julieanne Nielsen, I thought of the name Victoria when thinking of my grandma who passed away a few years ago. Her name was Viola but neither of us liked Viola so Victoria was the next obvious choice :)
I have thought a lot about what kind of person Victoria is going to be and there is one reoccurring word that continues to come to mind whenever I think of her future in our family. One word that I see when I look into her tiny little face. One word that I trully beleive will describe the type of person she is . . .
